Sweet Potato Apple Casserole

So far, this is the dish that gets the most requests, and I make it for pretty much every holiday. I figured the least I can do is spread the joy and share the recipe with everyone. Be prepared to get asked to bring this everywhere.
Ingredients
- 3 medium sweet potatoes, cut into cubes (long and skinny are easier to cut)
- 2 granny smith apples, cut into cubes
- 1 cup golden raisins
- 1 cup brown sugar
- ½ cup vegan buttery sticks (Earth Balance)
- 1 tsp cinnamon
- ¼ tsp each of cloves, ginger, and nutmeg
- ½ tsp salt
- 1 cup walnuts
Directions
Preheat the oven to 350 degrees. Bring some water in a dutch oven to a boil. Boil the sweet potatoes for ten minutes. Rinse in cold water and drain. Move the sweet potatoes into a large bowl with the apples. Add the golden raisins to the bowl and mix. Spoon into a large casserole dish (9 x 13 should work).
Combine brown sugar, vegan butter, cinnamon, and the seasonings in a frying pan. Bring to a boil and leave for one minute. Add the walnuts and coat, boiling for one more minute before you remove from the heat.
Pour the sauce over the sweet potato mixture in the casserole dish. Bake for 45 minutes.
