Watermelon Feta Mint Salad

Description

This is one of those salads that’s going to be best on the first day, but I don’t think you have to worry much about leftovers. I ate almost half of this in one day on my own. 


Ingredients

Watermelon Feta Mint Salad Base

  • Watermelon - I used about 12 slices from what we got, probably 1/2 of a watermelon or a bit more
  • Cucumbers - 3 mini cucumbers went into this recipe. You could probably use 1 full-size cucumber for the same proportions
  • Feta - 1/2 cup crumbled. I used sheep cheese, but you could also use Violife vegan feta or an equivalent. If you're using slices of feta, this was a little over half of one slice. Add to your liking!
  • Mint - 20 leaves diced.
  • Salt - I used a couple of twists from my sea salt grinder

Optional (but delicious) Dressing 

  • Juice from 2 limes
  • 1 tbsp olive oil
  • 1 tbsp honey, simple syrup, or maple syrup

Instructions

Directions 

  • Mix the salad base ingredients together in a bowl 
  • Drizzle the dressing on top and toss. Serve immediately!

Notes

Again, this dressing is very forgiving. Use what you think tastes good!
