Watermelon Feta Mint Salad – Dairy-Free Options!

We’ve had a ton of rain so far, and my tomatoes are thriving. Our first around of radishes is almost ready, and the sweet peas are shooting up fast.
I also love that it’s the season of outdoor parties. Our next-door neighbors had a graduation party and a lot of extra watermelon they didn’t want, so I took it and turned it into this delicious, refreshing salad.
A watermelon feta mint salad like this is so flexible. Everything I include is a suggestion with ideas for substitutions, but get creative and make this your own! I used sheep cheese but you can easily substitute the feta for vegan cheese as well.

Description
This is one of those salads that’s going to be best on the first day, but I don’t think you have to worry much about leftovers. I ate almost half of this in one day on my own.
Ingredients
Watermelon Feta Mint Salad Base
- Watermelon – I used about 12 slices from what we got, probably 1/2 of a watermelon or a bit more
- Cucumbers – 3 mini cucumbers went into this recipe. You could probably use 1 full-size cucumber for the same proportions
- Feta – 1/2 cup crumbled. I used sheep cheese, but you could also use Violife vegan feta or an equivalent. If you’re using slices of feta, this was a little over half of one slice. Add to your liking!
- Mint – 20 leaves diced.
- Salt – I used a couple of twists from my sea salt grinder
Optional (but delicious) Dressing
- Juice from 2 limes
- 1 tbsp olive oil
- 1 tbsp honey, simple syrup, or maple syrup

Directions
- Mix the salad base ingredients together in a bowl
- Drizzle the dressing on top and toss. Serve immediately!

Again, this dressing is very forgiving. Use what you think tastes good!
