Vegan Chocolate Chip Cookies (with Coconut oil!)

This chocolate chip recipe was born when I wanted to make cookies but didn’t necessarily check my supplies before I started. Luckily, it all worked out and they turned out delicious.
Ingredients
- 2 ¼ cups flour
- 1 tsp baking soda
- 1 tsp salt
- 1 cup coconut oil
- ¾ cup sugar
- ¾ cup brown sugar
- ½ cup applesauce
- 1 tsp vanilla
- 2 cups choc chips
- 1 cup walnuts
Directions
Preheat the oven to 375 degrees. In a large bowl, mix together the flour, baking soda, and salt. In a separate bowl, mix together the sugar and coconut oil. Make sure the coconut oil is at least a little liquid-y. It doesn’t have to be completely melted but it shouldn’t be rock solid. I use a hand mixer to combine these. After they are combined, add the sugars, applesauce, and vanilla to this bowl and use the hand mixer again.
Add the wet ingredients into the dry bowl and beat with a hand mixer again. Fold in the chocolate chips and walnuts.
Lightly grease a baking sheet. Drop the cookies in rounded tablespoons evenly on the baking sheet. Bake for about 12 minutes. They’ll be a little soft when they first come out but they’ll firm up once they cool down.
These are hands-down the best chocolate chip cookies I’ve ever made. Feed them to your friends and they won’t believe they’re vegan.
