Mother’s Day Recipe: Vegan Banana Granola Pancakes

That time of year when moms around the country get flowers, perfume, bath kits, and all that other typical mom stuff they can’t avoid. I always try to give my mom something a little different, because how many decorative soaps can you really need? This year, I got her some great accompaniments for camping and for her kitchen. I can’t go into specifics because she reads here sometimes and I don’t want to give away the surprise.
This year, we won’t be able to spend the first half of Mother’s Day together, but on the next weekend I can, I also want to make her these pancakes. Food is a great gift you can give to your mom, and no mom should ever have to cook on her special day. These banana granola pancakes are fast and easy to make, and they’re enough to feed a hungry family (if your family usually consumes about 12 pancakes).
Ingredients
- 1 ½ cups flour
- 3 ½ tsp baking powder
- 1 tsp salt
- 1 tbsp sugar
- 1 ¼ cups soymilk (or light coconut milk)
- ¼ cup applesauce
- 3 tbsp earth balance, melted
- Granola – ½ cup (use this recipe if you want. We used Crapola in our pancakes)
- 1 sliced banana
Directions
Sift together the dry ingredients in a large bowl (flour, baking powder, salt, and sugar) Then make a well in the middle of the bowl and add in the wet ingredients (soymilk, applesauce, and Earth Balance). Combine again. Fold in the granola and bananas.
Pour ¼ cup worth of batter at a time into a greased griddle or frying pan on medium. Heat until you see large bubbles forming on the top, then flip. Heat until brown and serve with vegan yogurt, maple syrup & butter, or even more bananas!
