Sometimes, small tweaks can revive an old recipe. In this case, I turned a recipe I made last summer into a slightly different recipe featuring a couple different baking ingredients. With this new year, I give you a facelift of a previous recipe: vegan cranberry pecan chocolate chip muffins.
To make up for the decadence of my last recipe (14 tablespoons of butter, who was I kidding?) here’s a “healthy” muffin recipe with lots of wheat flour, flaxseed meal, and if you want, chocolate chips. Let’s not go overboard with the health, it’s not quite time for resolutions.
This was one of those blog posts that I thought I had already written a long time ago, and then when I realized I didn’t, I had to rectify it immediately.
