Last night, we had grilled veggies so tasty that I wanted to share my secret with you. In a blog post published last year, I talked about foil packet vegetables, and how easy they were to make on the grill. I enjoy eating vegetables this way, but I also miss the char that develops from cooking things straight on the grill.
Call this method a compromise. Wrap your veggies in foil and cook them that way first (for beets it took about 20-25 mins on medium and we put the potatoes on for 30), and then transfer them to a vegetable basket or grill platter to finish them off for 5-10 minutes.
We filled the potato packet with olive oil, salt, pepper and some chopped onions. We made the beet packet the same way, minus the onions.
