Review: Oh She Glows Apple Cranberry Quinoa

This is what happened with this awesome quinoa recipe from Oh She Glows.
My friend and coworker made this dish for a department potluck, and I was lucky enough to get some of it. I thought it was delicious and asked for the recipe, and she sent me the link via email. I ended up making it a few weeks later for dinner, and then again at a potluck with some old friends and some new ones. They also loved it, so I promised I’d post about it here.

- I needed a pretty large wok to feel comfortable making this that I wouldn’t accidentally flip some out. That being said, I don’t have a cover big enough to go over a pan that size. While it does recommend that you cover your quinoa so that it cooks evenly, I haven’t had that luxury the two times I’ve made it and it still comes out really nicely.
- She uses maple syrup to balance out the bitterness from the vegetable broth and I get a lot of feedback between that and the vanilla about how delicious they make everything taste, so don’t skip it.
- It really does taste great warm or cold. I can say that with confidence as I’ve now had it both ways.
And there you have it. This is a pretty crowd-pleasing quinoa dish so it could be a nice one to serve someone who has never tried quinoa before.
