Recipe: Veganomicon’s Cashew Quinoa Stir Fry

The Veganomicon is the essential book to amazingly tasty vegan food. The recipes are great and directions are easy to follow. It also offers great advice on what to serve with what, and with vegan food, where everything could be considered a side dish almost, this is really helpful.
My all-time favorite recipe in the book is the Cashew Quinoa stir fry. You can find a version of the recipe here, but here are some changes I made to the stir fry you see in the pictures:
- I added water chestnuts, baby corn, and carrots.
- I did not use a hot chili or red pepper. Instead, we like eating this with sriracha.
- I always add more garlic than it says to add. Always.
This is a great recipe, because it’s quick and easy after you have the quinoa cooked and cooled, which you can do the day before, and it makes a ton of servings. It reheats really well for lunch leftovers, at which point the flavors intensify. And, as you can see, you can customize it and add your favorite stir fry ingredients into the mix.
