Recipe: Vegan Hot Chocolate

Please check out my disclosure policy for more details!Every year around Christmas, a tradition happens at my office – we put Christmas movies on the big TV in our room and drink hot cocoa. I love working around the holidays because it’s always a quieter time when I can catch up on everything, but I especially love when there’s only a few of us in and we all share movies and cocoa together. Unfortunately, I can’t drink any old cocoa. Most hot chocolate mixes have milk in them, so I brought a mix this year in order to feel like one of the gang.
Ingredients
- 2 tbsp cocoa powder
- 2 tbsp raw sugar
- dash cayenne
- 1-2 tbsp vegan chocolate chips
- 1 cup vanilla coconut milk (the kind in cartons, not the kind in cans)
Directions
If you’re planning on drinking this later in the day, mix together all ingredients except for the coconut milk and put into a container. Heat the coconut milk in the microwave for one minute. Add the mix, stir, and heat for one more minute or until the milk is hot and the chocolate chips melt.
This mix can be adjusted if you like things sweeter or creamier. I put in 2 tbsp chocolate chips for my mix, but it ende up being too chocolatey for me, so next time I’m only going to use 1 tbsp. I always add cayenne to my hot chocolate for a kick, but once again, that’s up to you.
