Recipe: Vegan Gluten-Free Brownies (REALLY!)

My friend had a birthday, so that’s the way the brownie crumbles.
Once people at work find out that you’re good at baking, you’re going to get asked to bake for birthdays. It’s inevitable. And trust me, I don’t mind it! I actually had a request for this one from the birthday girl, who sent me this link and said, “I want this for my birthday! Just kidding!” But come on, who was she kidding? Of course she wanted it for her birthday.
So, I took the recipe from Yammie’s Gluten Freedom and took it one step further, making it vegan as well. All you have to do is replace the eggs with applesauce. It came out great! I was also unable to get peanut butter chips that were dairy-free, but I mixed some peanut butter in with the melted chocolate chips to drizzle on top.
This was the most tempting thing I’ve made in my kitchen in a while. Of course, I had to test it a little, but I behaved. I promise!
One thing – they shouldn’t call these brownies. This is like straight-up fudge.
