Recipe: Vegan Banana Bread Pancakes

We had some very ripe bananas at home, and there was a tie between banana bread and pancakes for breakfast, so I figured, why not make banana bread pancakes?
These are easy to make and you can put whatever you like in banana bread into these pancakes.
Ingredients
- 1 ½ cups flour
- 3 ½ tsp baking powder
- 1 tsp salt
- 1 ¼ cup soymilk
- 1 mashed banana
- 3 tbsp Earth Balance, melted (if salted, forego other salt)
- 1 sliced banana
- ¼ cup walnuts
- ¼ cup vegan chocolate chips
Directions
Sift together the dry ingredients in a large bowl (flour, baking powder, and salt).
Then make a well in the middle of the bowl and add in the wet ingredients (soymilk, mashed bananas, and Earth Balance). Combine again. Fold in the sliced bananas, chocolate chips, and walnuts. The batter will be lumpy but as long as the dry ingredients are fully incorporated, you’re in good shape.
Pour ¼ cup worth of batter at a time into a greased griddle or frying pan on medium. Heat until you see large bubbles forming on the top, then flip. Heat until brown and serve with a wee smidge of Earth Balance. Go easy on the syrup if you use it. These cakes are plenty sweet on their own.
