This recipe was inspired by my friend, Tom, who told me I should make mango lassi since mangoes are at their best this time of year. I ended up making a pretty light recipe, but you could replace some of the soy milk with a heavier coconut milk (I used So Delicious but you could use something like Thai Kitchen canned coconut milk) or plain or vanilla soy milk.
- 2 cups vanilla soy or coconut milk
- ¼ tsp cardamom
- 2 mangoes, cut in pieces
- Maple syrup (optional)
Put all ingredients into a blender and blend until pureed. Depending on what kind of milk you use and how sweet the mangoes are, add maple syrup to taste. Makes enough for two people.
