Recipe: Hot Millet Breakfast Cereal

As part of my third week breakfasts, I made a large batch of millet cereal.
The method to making millet cereal is similar to that of steel-cut oats: I used 4 cups of liquid for 1/14 cups of millet. Trust me, it’s not just “bird food” – if you add the right spices and lots of tasty fruits to millet it can come out great.
This recipe is just my first attempt at millet, but there are so many different combinations of fruits, nuts, and seeds that you could try. Give this recipe a go or make your own creations.
Ingredients
- 1 1/4 cups millet
- 3 cups water
- 1 cup almond milk
- 1 honeycrisp apple
- 1/4 cup maple syrup
- 1/4 cup walnuts
- dried blueberries
- dried cranberries
- 1/2 tsp cinnamon
- 1/4 tsp cloves
- 1/4 tsp ginger
- 2 tbsp flax seeds
Directions
Pour the millet, water, and almond milk into a pot and bring to a boil. After it starts to boil, bring down to a simmer and allow the liquid to cook down. Once almost all of the liquid has cooked down, add the apple, maple syrup, walnuts, dried fruit, spices, and flax seeds. Depending on what you put in it, servings will vary, but this made me eight 8 oz. servings and I put each in a mason jar, just like steel-cut oats. It made breakfast for our whole week. Delicious and easy!
