Recipe: Banana Nut Steel-Cut Oats

I’ve got a pretty large repertoire as it is, but variety is the slice of life. It was surprising to me that I haven’t done banana nut oats yet. These came out tasting similar to banana bread, or the monkey salad I love so very much. Here’s what you need for it:
Ingredients
- 4 cups steel-cut oats
- 1 ¼ cups water
- salt
- 2 bananas, sliced and quartered
- ¾ cups chopped cashews
- 1 tsp vanilla
- ¼ cup cane sugar
Directions
Mix together the oats, water, and a sprinkle of salt, and bring to a boil. After it reaches the boiling point, bring down to low heat and cook for 5 minutes. Once most of the water has cooked down, stir in the bananas, cashews, vanilla, and cane sugar. Mix well. Spoon into 8 oz. individual jars, seal tightly, and leave on a countertop, either overnight or for at least a few hours before throwing in the fridge. Makes 6 jars.
