Quick and Easy: Red Lentil Dal

When I was paging through a recent edition of Real Simple, I found this recipe for red lentil dal. This is one of our favorite dishes at Odd Duck in Milwaukee, so I figured if I could make something close, it would be a great thing to tide us over until we could make it to the restaurant again.
One of the things I liked most about the recipe was the yogurt topping. It was pretty easy to make dairy-free – obviously, you can just pick up some plain coconut milk or soy yogurt. However, when we went to the grocery store, they were fresh out, so I can say with confidence that vegan sour cream makes a great substitute as well.
We had this dal with brown basmati rice, extra curry and cayenne (it’s definitely not spicy as written), and a big piece of vegan naan on the side.
