Quick and Easy: Potato & Vegetable Packet

Please check out my disclosure policy for more details!Over the past couple weeks, this easy side dish has been utilized using different potatoes and different vegetables. Here’s what I had on hand for dinner recently, but you could use anything you can dream up (ideas for other veggies below):

- 5 red potatoes
- 1 cup green beans
- 1 cup baby carrots
- Olive oil
- Salt & pepper
- Seasoning mix
- Other vegetable ideas: broccoli, zucchini, cauliflower, onion, asparagus, eggplant
Directions
Cut the red potatoes into quarters or smaller if they are…larger red potatoes. (Not really a good way to word that, but you know what I mean.) Snap and rinse the green beans. Roll out a large sheet of aluminum foil, spray with cooking oil or brush with olive oil, and put the potatoes on the bottom. Fill in the green beans and carrots afterwards, in a thin layer but slightly on top of the potatoes.
Drizzle olive oil over the vegetables, followed by salt, pepper, and any seasoning mix of your choice. I like Italian.
Put another sheet of aluminum foil over the vegetables and roll the two together. Make sure it’s sealed well in order to flip.
Put packet on the grill at med-high heat for 25-30 minutes, turning a little later than midway through. Make sure to check it around 15 minutes the first time you make the packet so nothing gets over or underdone. Layering the potatoes closer to the flame will ensure they get slightly more heat than the beans and carrots. If you don’t add potatoes to this, cook time will be closer to 15-20 minutes.
Take off the grill, pull apart the foil, and enjoy! Makes enough for 3 people, or 2 really hungry ones.
