It’s the 4th of July, you have a weekend of events ahead of you, and you don’t have a single idea for something to bring to the party. What can you make that’s fast and impressive? 4th of July pudding cups!
This recipe is easy, tasty, and it looks really pretty. And all you need is:
- Instant vanilla pudding packs (4 large ones)
- Red food dye
- Blue food dye
- 6 cups soy milk
- Oreos
- Plastic or glass entertaining cups (mine were 9 oz)
Mix up the instant pudding first, but skip the recipe on the back. Use one large pack and about 1/3 of another to make each pudding and add 2 cups of soy milk. They say you can’t use soy milk in Jello pudding, but they are wrong. You just need to use less of it so that it thickens properly. Do this with three bowls, and add red to one bowl and blue to another until they are a shade that you like.
Throw the pudding in the fridge for a bit for it to set a little longer (over an hour if you have the time) and crush up some Oreos. Line the bottom of your cups with some Oreos.
Now comes the fun part. Fill in the pudding in layers. Do red or blue first, then white in the middle, and the third color on top. Sprinkle with Oreos on top if you like or just leave plain. Mine made 6 cups but it depends on how big your cups are.
Phew, I hope this saves you this weekend. What are your favorite fast and no-nonsense holiday dishes?
