We just got back from vacation in ridiculously beautiful Cancun. The weather was perfect, the beach was beautiful, and it made me long for summer in Wisconsin. I can’t wait to spend days at the beach and the park, enjoying picnics that use fresh fruits and vegetables from the farmer’s market, and all of the other glorious things I do with my imaginary free time.
In the spirit of my warm and slightly delusional dreams, I was inspired to talk to you about what you can get now that’s fresh around Wisconsin in April.
Unfortunately, there’s not a lot growing or available in April. According to Epicurious, Wisconsin is in the dormant season, so your best best is to cook with stored items, like apples, pears, and root vegetables.
This farm fresh Wisconsin calendar shows that only parsnips are really growing anywhere in April, because, come on, there was no extended season for anything this year with how cold it was in the winter. So, still, we are just left with root vegetables, apples, and pears.
Don’t fret! This may seem like a small list of foods to incorporate into meals until May, but there are lots of fun things you could make with them. Here are 10 ideas, and cool recipes to go along with them:
- Baked parsnip fries
- Parsnip puree (why let potatoes always take center stage?)
- Root vegetable hash
- Apple pie steel-cut oats
- Sweet potato apple casserole
- The best garlic mashed potato recipe ever
- Baked potato and greens soup
- Vanilla poached pears
- Gluten-free potato + spinach pizza
- Pear rutabaga mash
